Today is Father’s Day. For our family that means swimming, finishing the treehouse, backyard games and a big bar-b-que dinner. Traditionally, holidays have always derailed any diet that I have been on. Yes, I realize that I am not actually on a “diet” and eating healthy doesn’t have to mean eating too much or eating different foods than the rest of my family. That being said, I am still nervous about staying on track. This week – my first week on Weight Watchers – I have already lost 7 lbs and I feel fantastic. I don’t want to blow it.
To help me plan a fun and healthy menu for a Father’s Day Feast, I assembled my planning committee – my kids. Together we came up with a list of all of dad’s favorite dishes:
My challenge was to create healthier versions of these dishes with reasonable point values that dad and the rest of the family would still find delicious. This is what I came up with:
|Miso Salmon||No make-over required for this recipe. It was already a healthy dish with a low points value.||There are only 6 points in each 3oz serving.
|German Potato Salad||Substituted a Weight Watchers German Potato Salad recipe for my old standby.||The new recipe is only 3 points for a 1/2 c serving.|
|Green Salad||Always a good choice.||0 points|
|Ranch Dressing||Found a delicious recipe for Ranch Dressing at the Skinny Kitchen with Nancy Fox. Not only does it taste great, it has only three ingredients and is very easy to make.||A 2 Tblsp. serving of this delicious dressing is only 1 point.|
|Sweet Tea||Made ice tea using a combination of green tea and frozen raspberries to give it a slightly sweet flavor. Added 1 drop of stevia to boost the sweetness.||0 points|
|Cherry Pie||My original cherry pie recipe came out to 13 points a serving – too high for my taste. Instead, I found a wonderful Crockpot Cherry Cobbler recipe by Wendy Zitman at LaLoosh.||The recipe makes 6 servings at 6 points a piece.|
|Vanilla Ice Cream||Since our usual brand of rich, vanilla ice cream is 7 points for a ½ cup serving, I decided to try frozen, vanilla yogurt instead.||2 points for a ½ c. serving|
All dishes received rave reviews from the entire family including dad who said that the miso salmon and the cherry cobbler were the best he had ever had. Happy Father’s Day!
